Chef Jean-Paul Medina is the Executive Chef/Director of F&B at Callicoon Hills where he develops unique and cuisine-appropriate menus for all outlets of the hotel (restaurant, beer garden, coffee shop, and banquet events).
At Callicoon Hills, he creates elevated and delicious farm-to-table dishes, often working with farms right down the road.
He’s on a journey to preserve and promote the delicate connection between farm, plate, people, and planet.
